Paul Pillot

An Atherton Wine Imports Direct Domaine

The Domaine was founded in 1900 by Jean-Baptiste Pillot, the grandfather of Paul Pillot. It was Paul who acquired many of the top vineyards they farm today: Clos St Jean, Grandes Ruchottes, Caillerets and Grand Montagne in Chassagne, plus St Aubin Charmois. Today Paul’s son Thierry manages the 13 hectare domaine.

They use organic farming methods, though they have not been officially certified. Thierry picks on the early side to preserve freshness. Because of their hard work and attention to detail in the vineyard throughout the year, they don’t sacrifice any physiological ripeness by picking early.

In the cellar, Thierry takes a non-interventionist approach. The lees are never stirred and they use many large 350-liter barrels with only a small percentage of new oak each year.

The wines are mouthwatering and vibrant expressions of each vineyard. Thierry excels equally with reds and whites. The incredible flavor intensity and length sets them apart.

Praise for Paul Pillot

“Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies, and to my mind, Pillot is one of a handful of exciting producers who win Chassagne-Montrachet the title of Burgundy's most interesting white wine producing village today. That he stills flies somewhat under the radar—at least relative to the quality to be found here—is perplexing. What's more, that's bound to change, and sooner rather than later, so readers shouldn't hesitate to buy whatever bottles they can find.” – William Kelley, The Wine Advocate

“Pillot is a top-flight talent for white burgundy. If you haven't tried his wines, you should.” – Allen Meadows, Burghound
