Thomas Pico began making wine in the Chablis village of Courgis (population 260) in 2004, and in very short order has established himself as one of the young superstars of the appellation. After earning a degree in Enology and gaining some experience in the Cote de Beaune, Thomas set to work in Chablis, taking over 8 hectares of his family’s 24 ha estate to create his own domaine: Pattes Loup, which means ‘Wolf’s Paws’.

He converted his 8 ha of vineyards first to Organic and then to Biodynamic practices and the results were so successful, that his father, George Pico, allowed Thomas to convert the remaining 16 hectares of family estate as well. Thomas manages some of the family vineyards and buys some of those grapes to augment his own production. By 2009 both properties were Organically Certified by Ecocert. Thomas’ path was clear to make some of the most exceptional wines in Chablis.
