"I have long been an admirer of the understated pure style of this Domaine's whites and the reds have always been good to very good as well. The Domaine was established in 1802 and has an interesting range of wines and in both colors among its 16 hectares. The approach with the reds is to destem 100% but not to crush the grapes with no cold maceration (thought the must is cooled to around 15 degrees Centigrade if necessary) and all natural yeasts. The must has two punch downs per day with only one pump over during the entire fermentation and the total cuvaison lasts between 10 to 14 days. Otherwise, it's a very hands off approach with new oak of only 10%, no fining and an ultra light filtration. Stylistically, the red wines are very pure and elegant, in fact sometimes almost delicate though the grands crus are decidedly bigger and richer." (April 2001)
